This is a brilliant recipe for fish batter which turns out really crisp and tasty (adapted from the Delia cook book) 4 oz flour (I use tritamyl - but you can use any) half teaspoon salt 5 fl oz water, plus 1 scant tablespoon
Mix the flour and salt in a bowl then gradually add water, whisking until the batter is smooth.
I put the fish straight into the fat in the deep fat fryer - removing the basket first or else it sticks to the basket. Hope this helps!

Keep the water for about an hour in the fridge before you make the batter, this will improve the crispness.
