As promised, Andean Quinoa and Vegetable Stew recipe
125g Quinoa 300ml water 1 onion 1 tbsp olive oil 1 red chilli 1 celery stalk 1 carrot 1 medium potato half red pepper 1 tsp ground cumin 1 tsp ground coriander salt 400g can chopped tomatoes 1 tsp dried oregano 25g brazil nuts (or walnuts taste good too)
1. Put water and quinoa in pan. Bring to boil, simmer 10-15 mins until swollen and tender. Cover to keep warm 2. Chop onion and fry gently 5 mins 3. Chop chilli (deseed for milder flavour; finely slice celery and carrot; small dice potato; slice pepper into strips. 4. When onion soft add cumin, coriander and chilli. Cook 1 min 5. Add celery, potato, carrot, pepper and 1 tbsp water. Season with salt, stir well, cover pan and cook over low heat for 10 mins 6. Add tomatoes, oregano and cook covered for 10 mins 7. Break nuts and dry roast in fryinbg pan (I dont bother and just add them 'raw'. 8. When the stew is ready, stir in quinoa and nuts. ***********
