As requested: 1lb flour mix (I used Glutano but any would work) pinch salt teaspoon xanthan gum pkt dried yeast 250ml cold milk 250ml boiling water good dollop of extra virgin olive oil Mix dry ingredients. Add wet ingredients mixed together. Mix well (I used the Kenwood)to a smooth dryish dough (looks a bit like Polyfilla). Leave in a warmish place for an hour or so - should double in size. Divide into 8 and roll each out to ~9" circle. Top with your choice (I used home made tomato puree, cheese, chorizo, mushroom, onion and olives). Brush edges with egg for a golden look and bake for ~12 minutes at 220C. Serve with lots of red wine.
