Buckwheat Galletes (vegetarian)

Buckwheat Galletes
2oz buckwheat flour 6oz Glutafin baking mix half tsp salt 1 egg separated 12 fl oz milk 1oz butter, melted veg oil for frying
Sift flours and salt into a bowl and stir in egg yolk. Gradually add milk and butter and beat well. Whisk egg white til stiff and fold into batter.
Heat a little oil in small non stick omelette pan. Remove from heat and pour off any excess oil. Pour in about 2 tbs batter. Cook over moderately high heat for 2 mins til top is beginning to look dry, then turn pancake over. Cook other side for 20-30 secs til golden.
I like to add cooked, well drained fresh spinach and blue cheese to my pancakes.
I haven't actually tried the above recipe but you will find one on Dove's Farm Buckwheat Flour. In that particular recipe, no other flour is added. It's important to let the batter rest for at least one hour, then mix again well. I use butter instead of veg oil.
The French use this mainly for savoury pancakes and normal flour for sweet ones. They throw most things into them, i.e. mushrooms, chopped ham, onions, tomatoes and an egg. They are useful to take to work, ready made, as they heat well in the micro.
