I use cornflour (3 high scoops using a soup spoon). 3 eggs and 1/4 pt milk. Cook in a very hot oven 200 C and they rise very high and are very light!

my friend jan gave me a yorkshire pud recipe which is the best ever!
4oz cornflour
2 eggs
pinch salt
1/4 pint of milk
make sure oil in the tin is really hot before putting mix in!
cook on gas 7/ 220 C til golden

Light & Fluffy
9/10 puddings
Ingredients
50g Brown & Polson cornflour
50g GF mix or Doves GF flour
pinch salt
3 medium eggs beaten
140ml milk
2TAB veg oil
220C/210C Fan /425F/Gas 7
Method
Place oil in muffin tins & heat approx 5 minutes
Put cornflour & GF mix/flour in medium bowl, add salt
Add beaten eggs &whisk to thick batter
Add milk & whisk again until smooth
Pour into muffin tins& cook until golden brown& well risen 20/25 minutes approx.

3 heaped Tablespoons B&P cornflour
pinch salt
3medium eggs beaten
140ml (1/4 pint)
2 Tablespoons veg oil
200C/190C Fan/400F/Gas 6
Method
Divide oil between muffin tins& place in preheated oven
Place cornflour in medium size bowl add salt then eggs.
Using balloon whisk mix to smooth batter, add milk, whisk again.
Pour into sizzling oilin tins.
Cook 25 minutes

Forgot to mention that I have used Morrison's, Sainsbury's and Brown & Poulsons' cornflour, so don't worry that it mentions specifically Brown & Poulsons'.
The secret, as always with Yorkie puds, is to heat the oil in the tray first before adding the batter, and cook them in a v. hot oven, and don't open the door when they are cooking.

....They are very tasty and rise to a peak. Non gf partner from Yorkshire loves them:-
100g mix (I use Juvela)
5ml baking powder
1 medium egg
3fl oz water 4 fl oz milk together
put miz and baking powder in bowl make a hole in the middle and add the egg. mix in then slowly add the milk and water turn wisk to fastest speed for 1 minute.
heat pan in oven then put oil and place on hob til very hot, add mix leave for about 30 seconds then put in oven 180^ for 30 mins - do not open oven door while cooking

Yorkshires,
I make them as follows and then turned out perfectly:
200ml beaten egg (roughly, 4 medium eggs or 3 large eggs)
200ml semi-skimmed milk
140g Dove's Farm Plain GF flour
Salt and pepper
Mix the milk and egg, then beat in the flour. Stick a muffin tin in an oven pre-heated to 220degrees C for 5-10minutes, with about 1cm of veg/sunflower oil in the bottom of each hole.
Take the muffin tin out of the oven and straight away, pour the batter into each hole evenly (but be careful because you don't want to overfill them. There should probably be no more than 1-1.5cm of batter in each hole). Then place back in the oven for 20-25mins.
And you can freeze them once they've cooled, so you can make them BEFORE Christmas and then heat them up as you would normal frozen ones on the day! Bonus!
