I have been to Fethiye a couple of times but several years ago. Fethiye in those days was lovely although I think the area has got more commercialised/built up over the years. There are lots of lovely places to go to from that area and it is easy to get about by Dolmus (very regular minibuses).
We have been to Bitez (small resort near Bodrum) for the past 2 years and have booked to go again next year as it is just so lovely and eating out was so easy with our Turkish Translation Card (see below for link.) We stayed in apartments then had the freedom of doing our own breakfast and some lunches but ate out every night with no problem. I would think that wherever you go in Turkey, you would get fairly well looked after, I have been there quite a few times over the past 20 years and have never found an un-helpful Turk!
A lot of the food is naturally gluten free and both times we have been with Coeliacs ( 3 of them this year!) if the recipe wasn't gluten free then they adapted it for us (for example they made my son some meatballs without the breadcrumbs)
We took plenty of bread with us & foil and they heated that in their ovens for us to go with the meals. We also took pasta to which they added GF sauces such as bolognaise. Thye also made pizzas for us using out pizza base (didn't even get charged for them!)
They are such kind people & nothing was too much trouble. (They even got cider in specially for my recently diagnosed ex-beer drinking husband!)

Might be worth looking at this site also, gives you reviews about hotels, resorts etc. Just put in the country & resort and it should have a list of the hotels in the resort!
