I have found an excellent fish restaurant between Torbole and Arco which caters specifically for Coeliacs, and Ristoranto Panorama overlooking the lake (staggering view) near Malcesine speak English and will make a pizza on your own base if you take one. I have also found that in most places, once they have understood the problem, they are incredibly helpful.
