I have been reading and trying to learn what works for me as diabetic with CD...some interesting facts that have worked for me are:
Diabetes, both type 1 and type 2, results in high levels of blood sugar. There are many ways for a diabetic to lower their blood sugar, including dietary changes. Eating a low-carb diabetic diet, excluding foods that increase blood sugar levels, allows the diabetic to manage their blood sugar levels with less medication. Maintaining normal blood sugar readings is important for a diabetic, due to the health risks that are associated with high blood sugar levels.
Carbohydrates increase blood sugar levels due to the fact that they are converted into sugar and absorbed into the bloodstream. Simple carbohydrates, such as products made with refined flour, are converted more quickly, while complex carbohydrates are absorbed more slowly. Any diabetic product with high amounts of carbohydrate, particularly refined flour or high glycemic sugar substitutes, should be avoided when cooking for a diabetic, in order to maintain normal blood glucose levels.
I now follow a FREE VEG list and incorporate this into my daily food plans
I sometimes substitute a normal jacket potato for a baked sweet potato
Celeriac is a great veggie, ugly but so useful! I have mashed it, pureed it and have made Chips from it...so versatile
I am eating less carbs not only to keep my bg count low but also to help me lose weight...

Well, since I wrote the above, I really went off plan.... I am now getting myself back on track and the only way to do it for me, is to plan and plan and plan... All too quickly, in a hurry, I will reach for whatever is on hand and that has been the mistake because I have not been having good alternatives available to hand.. Hoping to post some interesting CD and Diabetic friendly recepies I find useful...do post yours as well!!

Hello Paulette I've been a coeliac member for years but having just found out my (overweight)husband is type 2, I'm on a whole new learning curve. The low carb, high fat diet for diabetes fits well into my CD regime, apart from the potatoes ..... I have always relied on a potato and cheese in an emergency and potatoes are to be limited for him. He insists on 2 slices of Bergan for breakfast, and if you add the huge amounts of fruit he insists is 'slimming', he has more or less used up his carb allowance for the day. Lunch isn't too difficult, but evening meals are a nightmare ..... what to make that's GF and LC? I wish I had some recipes to post.

good old ratatouille is my easy recipe that can be eaten on its own, with cheese, with jacket spud, with rice or add some beans to the basic recipe. So versatile.
slice or chop an onion, 1 garlic clove
mixture of red pepper, yellow, green -minimum of 1 pepper
chopped celery stalk if desired
fry them in some oil stirring on a medium heat before adding a can of tomatoes (not the small one) add a pinch of dried basil and simmer until the veg is tender. Season to taste.
It is basically low carb (the can of tomatoes being the only carbs) and high in antioxidants.
