Australian GF chocolate cake

235g doves plain flour 50g cocoa 275g caster sugar 150g butter melted 20mls white vinegar 250mls evaporated milk 2 large eggs 1 large banane mashed 2 heaped tablespoons red currant jelly 1 heaped teaspoon bicarbonate soda
grease and base line two 20cms round sandwich tins. sift flour, soda, cocoa, and sugar into a mixing bowl. Add butter, vinegar and milk. Beat with electric whiskon low for 1 min. Add eggs, banana and jelly. Beat on medium for 2mins. Pour mixture into tins and bake in a moderate oven( about 150c-160c, depending on oven)for about 40mins. Leave cakes in tins for 5mins to cool. Then turn out onto wire rack. Sandwich together withvanilla flavoured butter cream. Seive a little cocoa over the top of cake. Delic. If your sandwich tins are not very deep(as it rises quite alot)i make a few buns as well, because the first one i made went all over the oven. It sounds alot of messing about, but if you prepare everything before whisking together, it takes no time at all.
