...I often go to Guernsey but have yet to find a restaurant that has an itemised GF menu. That said, I seldom have a problem eating out when there. I would definitely recommend Da Nellos, as listed on my second link below. Great food, ambience, etc.
On my first link, you will see the Guernsey Vegetarian Society - perhaps try contacting them for help.
There is a v.g. hotel with a health spa, etc....

You go up the High Street in St Peter Port to the top, turn left, up a steep hill, there is a park on the left and it is on the right-hand side.

To the left of Victoria Marina, St Peter Port, there is a v.g. fish restaurant.
I have also eaten many times at Guernsey Yacht Club, which serves good food and has great views.

I have just spent the weekend in Guernsey where I visited a cafe called A Piece of Cake (Mill Street in St Peter Port) on glimpsing an advert which said it made gluten free cakes. Cakes and more! They also bake savouries to order!! This offer was too good to refuse so yesterday morning I picked up my tomato and onion quiche which i've just finished eating now. Absolutely delicious! As was the steak pie, banana cake and tiffin slice....
