Ice Cream Evelyn Jackson, from Hawick, who was diagnosed with coeliac 10 years ago, is a member of the Border Counties Group of the Coeliac Society of which there are currently 120 members. She revealed how hotels and restaurants in Hawick were coming round to the idea of gluten-free meals and that local ice-cream shop Caldwells in Innerleithen were now selling gluten-free ice-cream cones. She told the “Peeblesshire News”: “I felt that if you were away for the day and you wanted an ice-cream cone then you either had to take a gluten-free cone in your pocket or have ice-cream in a tub. “Because Caldwells is famous for their ice cream, I contacted Andrew Caldwell, and although the recipe for his ice-cream is a secret he decided that he would contact everybody he buys the ingredients from to see if they were all gluten free. “They all came back saying that the ingredients were gluten free. “So with the introduction of special gluten-free cones I was able to enjoy a 99-cone for the first time in nine years. “The idea is that Andrew is going to keep the cones and anybody who has got the condition can enjoy an ice-cream cone.” www.peeblesshirenews.com/news/ar ... erers.html
