| Gluten Free | Vegetarian | Ingredients: 250g gluten free self raising flour – I use Doves Farm 125g butter 2 very ripe bananas, mashed with a fork 2 tbsp runny honey 2 eggs, beaten 1 tsp olive oil to grease sides optional: almond flakes You will need a bread tin and grease proof paper. Directions: 1. Preheat the oven to 180°c. Cut a piece of grease proof paper to line the tin (allow some over hang). Lightly grease with olive oil. 2. In a bowl, beat the butter with a wooden spoon until light and creamy. Add the beaten eggs a bit at a time stirring to combine, don’t worry if the mixture looks as though it has separated at this point. Sieve the flour and fold into the mixture. Mix in the honey and the mashed bananas. 3. Spoon into the tin, spreading evenly into the sides and sprinkle with flaked almonds if using. A trick to getting even distribution of the mixture is to bang the tin on a flat surface a couple of times. Place in the hot oven and bake for 40 minutes. To check if it’s done use a cocktail stick or fork to pierce the centre of the cake, leave for a couple of seconds and remove, if it’s sticky it needs longer but if it’s clean it is cooked through. Remove from the tin and allow to cool on the side before slicing.
