.... I have loads of recipes I cook for the family after work,.... I do prefer the simple recipes, often cooked while helping with homework etc etc, and where possible with help from the kids...!
Here are some ideas, .... perhaps some will be useful!
-baked potato, grated cheese, baked beans or salad leaves
- chilli (mild): fry 500 g mince, add 1 tin kidney beans with chilli sauce, 1 tin of tomatoes. Serve with rice (to cook rice: 1 cup rice to 2 cups boiling water in large dish on microwave, loose lid, 70% power for half the cooking time on the packet, or as long as it takes to absorb the water, no need to rinse unless it's brown rice).
- fried egg/omelette and oven chips + peas/beans/salad
- adapted ploughmans lunch: apple, cheese, salad, and gf roll or potato, pickled onions (but use the ones in white spirit vinegar not in brown malted vinegar)
- corned beef hash: corned beef, tomatoes, beans and new potatoes
- tuna and pasta: tin tuna, plate of gf pasta, tin of tomatoes with basil or similar. (optional grated cheese)
- slow cooker is a great idea, chicken casserole, cheap ingredients, chicken legs, carrots etc, gluten free stock cube (knorr?)!
- chilli sausage, as above but use cooked gluten free sausages instead of mince.
- slow cooker: beef casserole using chunks of braising steak, carrots, onions, bay leaf, gluten free beef stock cube
- for cheap instant desserts - most ice cream is gf, custard with fruit, most chocolate/other mousses, most yoghurt. Check the labels.
Other ideas, slightly longer but still very quick!
- risotto: fry an onion very gently in some butter for 10 mins, add some garlic (use garlic powder for a cheat), add shredded cooked meat/sausages (optional), or chopped raw chicken (but make sure you fry it till cooked), peppers, anything you fancy, stir in some rice (risotto rice or long grain white rice), add hot stock and boil gently for 18 mins (depending on rice), add some peas and/or sweet corn and/or mushrooms. (This recipe makes a small amount of chopped chicken, raw or cooked, go a long way!)
- If you have a microwave and a little bit of time it is possible to do quick gluten free sponge puddings (about 5 mins) if you miss them, just google recipe or ask on here. (In fact, most of the stuff on the free-from shelves you can make yourself for a fraction of the price, although most of this stuff is not key to a balanced diet as it's cakes and biscuits etc.)
- Also if you have a bit of time pancakes (American thick ones/drop scones or European thin ones) are quick and fun to make, and using gluten free flour makes no difference.
- bolognaise sauce: dry fry 500g mince, add chopped carrots, chopped onions, chopped mushrooms, chopped peppers, garlic, fry for a few more minutes until veg starts to soften, add 1 or 2 tins of tomatoes and some mixed herbs, cover and cook for 2o mins or until you are so hungry you can't wait any longer, serve with gluten free pasta or spaghetti and freeze the leftovers for another day. (a glass of wine also enhances this dish, either drink it or add it to the pan...)
- sausage and beans: fry some gf sausages until well cooked (15-20 mins), add chopped onions, carrots, celery, fry for few more minutes, stir in a tin of cannellini beans (or other beans without sauce on them), add some hot stock and simmer until veg is cooked, add a spoonful of wholegrain mustard (optional) and server with a gf baguette or baked potato.

- special pudding: meringue with whipped cream and defrosted frozen raspberries or tinned peaches/any other soft fruit.
I can strongly recommend the BBC Good Food cook book: 101 cheap eats,

which is where several of these came from. Most recipes in there can easily be made gluten free using the pasta you will be able to get on prescription. They are all easy, and to make them even quicker prepare chopped veg beforehand. (e.g. "herby pasta with peas and bacon", which uses a packet of boursin cheese + milk to make a simple but luxurious cheese sauce, stirred into gf pasta with crispy bacon, peas and chopped cooked red pepper. (pepper and peas are cooked briefly in the pan with the pasta))
