Cake recipe needed

My daughter (aged 10) is keen to enter a local bake off competition. Does anyone have a reliable recipe for a cake, preferably square, she can decorate? The last ones we tried all fell apart (maybe we used too many almonds...)

Use any cake recipe but use Doves Farm Flour, then no need for that Gum stuff to be added. I do it all the time for my wife's shop and one old dear keeps asking me for my recipe, they won't have it that I do 8oz doves gf 8oz golden castor 80z Stork marg 4 eggs all in the bowl with a big dash vanilla juice (brown bottle) mix all together with an electric whisk, put into 2 big springforms, cook in a 180/190 oven till I smell the cake then start testing with a knife for cooked or not. make a good butter icing use a good strawberry jam voila an Old Fashioned Victoria Sponge.
Last week even cooked it in a ring thing for the halogen oven, put red colouring in the mix, used half the mix in the ring, then added chocolate powder to the the remainder of the red mix and spread that on top of the mix already in the ring, once cooked in the halogen oven and taken out the ring, somehow the chocolate mix had wrapped around the red mix completely, result was one V happy 3yr old who thought Papa was a wizard lol, pink cake wrapped in chocolate cake, covered it in melted Galaxy (before anyone says it, it is still GF even though there is a warning of might contain) must admit shocked myself the way it turned out.

Agree with Peter's basic sponge, but I use less sugar and always make with butter. Basically butter, sugar, eggs, flour, baking powder and some vanilla extract.
Neither Xantham Gum nor Psyllium required:
Ingredients:
225gms/8 ozs butter
195/gms7 ozs sugar
4 eggs
225gms/8 ozs Finax or any other Gluten Free Flour Mix.
Note: if making with rice based gf flour mix do ensure that you bake in the lower part of the oven otherwise top of the cake(s) cook too quickly and then the cakes cannot rise!!
5 level teaspoons Baking Powder
teaspoon Vanilla extract (optional)
Method: Cream the butter and sugar together. Add Baking Powder, teaspoon Vanilla Extract (optional), and add eggs (one at a time) and mix well after adding each one. After adding 3rd egg add a few tablespoons of flour to prevent curdling. Add 4th egg & mix well. Add remaining flour and using a metal spoon fold in. Spoon mixture into a prepared baking tin (or into individual cup cake tin). Bake in lower part of oven for approximately 30 to 40 minutes (time may vary due to different oven types such as fan assisted, conventional etc.). Temperature standard oven 190deg/Gas Mark 5.
Variations - Coffee Walnut Sponge: add chopped Walnuts and tablespoon strong coffee. Slice baked sponge horizontally into two and sandwich together with coffee flavoured buttercream. Lemon Sponge: add grated lemon rind to cake mix. Slice baked sponge horizontally into two and sandwich together with lemon flavoured buttercream or make a cream filling made with Cream Cheese sweetened with icing sugar and flavoured with juice of half a lemon.

The eggs should help keep it whole. Lining the cake tin with some silicone/Bakewell paper can also help. Be careful if using soft margarines / spreads as they contain more water. Butter or Stork might be best fat option.

Let it cool in the tin before turning out, grease the tin with butter/marg and line with greaseproof paper or use a liner.
