Tomato Soup Cake

The words Tomato Soup and Cake are not words I would ever have thought be used in the same sentence but after finding out that this really is a cake I had to make it.
When you add the soup it looks and smells pretty revolting but once cooked it actually turns out to be really, really nice.
You can either put a frosting on the top or I think serve it warm with custard/ice cream.
The recipe I used was one I found on the Daily Mail Online website and the link is below.
125g unsalted butter
225g plain flour (I used Dove's Farm)
2 tsp baking powder
3⁄4 tsp bicarbonate of soda (I didn't have any but did use Xantham Gum)
½ tsp ground cinnamon
½ tsp ground ginger
a pinch of ground cloves (I used mixed spice instead)
225g golden caster sugar
1 x 300g tin Heinz tomato soup
2 medium eggs
50g raisins (I used craisins and 100g of chopped nuts)
I didn't follow the method as detailed in the recipe though - this is what I did:
Mix until fluffy the butter and sugar.
Add the eggs one at a time and beat well.
In a separate bowl sift all the dry ingredients.
Add the tomato soup to the butter and sugar. Mix well and try not to look too disgusted!
Fold in the dry ingredients.
Add the fruit.
Pour into a tin and bake at 190 C for about 30-35 mins. I used a square 20cm tray bake tin.
The cake is absolutely lovely and tastes like a mellow fruit cake. You wouldn't know it has a can of soup in and I really would recommend it!

I made the cake yesterday and have to say it is really delicious. I followed your recipe, but added 150g of dried fruit as I thought 50g was a bit mean. I will definitely be making it again. I agree it didn't look very appetising when mixing it, but it's surprisingly good. So lovely and moist. ...
