APPLE CAKE
preheat oven to 350F, 180C grease and line a 9"x13" baking pan
4 cups unpeeled apples cut in quarter-inch chunks 2 cups SR gf flour (I used Asdas) 1/2 teasp baking powder 1/4 teasp xantham gum 1 teasp ground cinnamon 2 eggs 2 cups sugar 1 teasp vanilla extract 1/2 cup canola oil (or similar) 1/2 cup dried fruit (I used sultanas) 1/2 cup chopped nuts (optional)
Mix eggs and sugar Add all other ingredients Pour mixture into tin Bake up to 40 mins (Do not remove from oven until well cooked - its a very moist cake and will fall to pieces if under cooked) Leave to cool in pan.
If you undercook it, you can still enjoy it with custard and/or cream.
