I had a lovely chinese carry out meal from Jimmy Wan's in Stuart Street, East Kilbride on Friday night, I asked the young girl serving at the counter what flour was used to thicken their sauces and she said she would speak to the chef. The chef came out to speak to me and told me that they use potato starch and also the batter in the Sweet and Sour Chicken was also GF as they use potato starch for that too. I didn't have the fried rice just boiled.
