As noted in an earlier comment, I found restaurants in US to be clued up on Gluten free. It is absolutely essential however to eat in restaurants that have a separate gluten free menu. This ensures they have a better understanding and all the waiters / waitresses specifically write on order if chosen from gluten free menu. While there is always a disclaimer in the restaurants about the possibility of cross contamination they do advise that preparation is conducted separately. In the 14 days of eating out every night, my daughter was not glutened once which was a fantastic result. The one time we went to a restaurant that did not have a separate menu, the difference was night and day so best to check in advance.
Happened to go into a supermarket as well. Publix ( compares to our Sainsbury i guess), as I had already printed off a 7 page document listing their own brand gluten free products. Additionally in store, shelf labels also had gluten free stars where applicable which was very helpful. I also deduced that they do not apply them to goods where there is a "may contain " which is not labelled on US products as far as I could see. I assumed this as i noticed Doritos which have no gluten containing ingredients but did not have the star. Doritos are made by Pepsi who also make Lays crisps( Walkers in UK) so i guess they made in same facility with other products. Kellogs also have specific Gluten free Rice Crispies. The packet specifically states they are made in a separate gluten free facility. Lets hope they roll that out elsewhere !
ps best comment came from girl at ice cream vendor in Universal studios when i asked about gluten in ice cream and she clearly had no idea what I was talking about and I heard her say to her colleague " what is gluten, i didnt pass my chemistry exam - had to laugh. They did snatch victory from the jaws of defeat when one of them said, but we do have a folder with all the ingredients in each ice cream and handed it over ! Other ice cream places had that too so worth asking if unsure.
