Easy home made gluten free vegetable soup

This recipe uses 3 packs of veg from Mash Direct, available from many outlets, more in NI and Scotland but also in England via places like Spar and Costcutter. There are certainly other brands of the same things available.
Basically buy two packs of ready made carrot and parsnip and one of turnip. Fry a chopped onion in a saucepan, add in all the veg packs, add two stock cubes, boiling water, season with salt and pepper. Add half a cup or so of red lentils and boil for half an hour. Voila! You have lovely gluten free lentil/ veg soup with minimum preparation. It tastes great too. I use ham stock cubes but you could use vegetable ones for vegetarian soup. You will be pleasantly surprised by the result. The veg packs are often on offer for £1 which makes it all better value. You get a lot of soup for your money, at least 6 bowls and it is way better than tinned.

I am always experimenting with home made soups ( no need for flour ) my latest effort was some reduced enochi and shitaki mushrooms ( morrisons on thursday)
they were delicious
i sautee diced onion ( buy ready diced to save time ) with a clove of garlic ( save time with the dorit cubes) add the veg or whatever you are putting in , i then put in 2 x stock cubes and plenty of boiling water. its ready in less than 20 mins. then blitz and there you are.

That sounds lovely! You could probably chuck it all in a slow cooker too, handy if you're working all day.
