receipe for shortbread biscuits

Hi, finally getting round to sharing this with you, it is absolutley yummy, make sure you use butter not margerine.
150g of unsalted butter 115g of caster sugar (i use 100g so it's not too sweet) 150g of plain flour (i use juvela) 65g of rice flour (asian food stores stock this, supermarkets may also have it). 1/4tsp baking powder (gf) 1/4tsp salt.
Preheat oven 160 C/325F/Gas 3.
Cream the butter and suger until light and fluffy, sift over the flours, baking powder salt and mix well.
Press the mixture into a greased round or square tin ( i use a baking tray and just press it flat and don't tend to roll it. As it heats in the oven it well spread evenly to the edges...as long as edges of tray are slightly raised). Bake until golden about 40-45 mins (i find 25 mins is sufficient as it starts to brown, judge it from the colouring). Allow it to cool slightly, then use biscuit cutter or upside down glass to make circles whilst still warm. Store in an airtight container and enjoy!!
