Recipe: Quick easy GF shortbread

Recipe is as follows:- 9oz GF plain flour (I use Doves farm) 3oz cornflour 8oz softened butter (best for real scottish shortbread taste) 4oz caster sugar pinch salt Ingredients can be doubled to make more.
Put all ingredients in a bowl and mix well with a wooden spoon or use food processor. Spread onto a baking tray to a depth of about 1cm. No need to grease. Use a fork to do this and when levelled lightly groove the top with the fork. Cook in moderate oven 160c for 40-45 mins or when it has turned light golden colour. Resist overcooking as the taste changes. Take out of the oven and use a knife to gently cut the shape of pieces you want. Drizzle a dusting of sugar over the top of the shortbread. Leave to cool for several minutes then use a server to place on a cooling rack. If you turn the oven on before you start you will be eating the shortbread in around an hour or so.
