Milk free & GF

My son is at uni - he's allergic to gluten and milk as well as coeliac so self-caters. His favourite things to cook are:
"all-in-one-rice" - Chop an onion, fry it gently while washing rice, add rice and water to saucepan, add sun-dried tomatoes, a bit of a gf stockcube and towards the end some peas or sweetcorn. You could also add chopped cooked ham at the end or eat it with cold meat.
vegetable stew - basically chop onions, potatoes, carrots, parsnip (and any other veggies you have) and simmer the whole lot with a bit of stockcube until tender. If you have longer you can cook diced chicken before adding the vegetables - but make sure the chicken is well cooked (sorry in mother mode at this point!).
He also makes "pan bread" - use a measuring jug - saves time and the need for scales:
Put a frying pan on to heat with a little oil in it.
1/2 pint of Dove Farm gf flour
1 1/2 teasp gf baking powder (supercook - check the front the gf one says gf)
sultanas (as many as you want)
1/4 teasp cinnamon
2 tablespoons of ground almonds
Mix all the above and add milk (or Rice Milk if lactose intolerant) until it is quite thick but pourable. Pour into the frying pan - turn when it is cooked enough to be turned. Very quick and satisfying on a cold day!
Uncle Ben's Express long grain rice microwaves in 2 minutes (or two minutes on the hob) if you are in a hurry but is an expensive way to eat rice regularly.
Baxters Chicken Broth can be heated with Sharwoods Medium Rice Noodles in it and is quick. The Sharwoods Medium Rice Noodles don't need to be rehydrated before you put them in so add extra water to the soup.
My son doesn't use pasta sauces - he likes his pasta with sundried tomatoes, chopped spring onions and a some lemon-infused olive oil.
There are some Meridian sauces (in the Free from at Tesco, on the shelves generally in other places). The Tikka Masala Sauce is nice with cubed chicken or turkey cooked in it, and the Creamy White Wine and Mushroom Sauce is lovely with Coley or other white fish cooked in it.......
