No-cook GF Pudding
Three ingredients: 2 packets GF ginger biscuits - I think I used Glutano last time and there aren't many in a box, so you will need about a box and a half. 1 medium carton whipping cream - about 284ml Bottle of sherry.
Whip the cream until it's really thick, like it would be on top of a trifle - almsst as thick as Angel Delight before you've left it to set :-) Put about an inch of sherry in a small bowl, wide enough to be able to get your hand in while holding a biscuit. Dip the biscuits in the sherry, holding them flat, but don't leave in for more than about 2 seconds or they disintegrate. When you've dipped two, sandwich them together with some cream and stand them on their end. I use an oblong sandwich plate and just keep going till the plate is full. When you've finished, it should be a sort of ginger and cream log. Cover it with more cream. I sometimes grate some chocolate on top to finish it off. If you want a non-alcoholic version, you can use fresh orange juice instead of sherry. I did try it with brandy once, but I don't drink and it just about knocked me out.
