Quick and Easy Trout

...Another use for the processor is making a breadcrumb coating. For this I butter the slices of GF bread (crusts removed) before processing it into crumbs.
....put boneless fillets of Trout on a baking tray lined with tinfoil. I make the buttered breadcrumbs in the same way but before removing them from the processor I add a few sprigs of parsley and some white pepper and process for another couple of seconds to chop the parsley. I put this on top of the Trout and pat it down slightly. I then pour a little lemon juice or white wine around the fish to help keep it moist and bake in the oven for about 20 mins @ 200C. Another healthy, quick and easy dish.
I usually scatter some flaked almonds over the topping before I put the Trout into the oven. They brown nicely and make it look very appetising.
