Sausage meat: 100g g.f. bread, 100ml. of milk, 500g minced pork, 1 egg, 1 tea spoon chopped parsley, pinch of salt ,pepper, and nutmeg.
Method: Break up bnread and put in bowl add milk and soak,for a couple of minutes, squeeze bread, add to mince beat in egg add seasoning and mix. Alternatives: For stuffing add a finely chopped onion,or a chopped apple.These are great for burgers as well. Boil 6 eggs and allow to cool, remove shells and wrap in sausage meat for scotch eggs.Put scotch eggs in a greased muffin type baking tray and bake 180C FOR 20/25mins.Bake stuffing the same way.For burgers just fry each side for a few minutes each,depending how thick you make them.
