Christmas Ice Cream Ingredients 25g/1oz each of sultanas and raisins 25g/1oz chopped mixed peel 90ml/6tbsp brandy 400ml/14fl oz fresh custard g.f. 600ml/1pt fresh double cream Method 1. Soak the dried fruits in a bowl in the brandy for 2 hours. The fruit should plump up. 2. To make the ice cream, mix the custard and cream together and add the soaked fruit and brandy. 3. Churn in an ice cream machine according to manufacturers instructions, until firm. If you don't have an ice cream maker, then freeze the mixture in a plastic container and take out and re-mix with a fork every 30 minutes until the right consistency is reached
