Quick last minute GF butter shortbread recipe

I planned to make caramel shortcake today but wasn't sure if the base would work out so tried shortbread on its own with my old non GF recipe slightly amended. It is a doddle and turned out really well and wasn't too crumbly. To make:- Melt 8 oz butter in a pan, add 12 oz Doves Farm white flour and 4 oz caster sugar and a little pinch of salt. Mix it all in for a minute or so and then spread on a baking tray to about 1cm thick. Use a fork to pattern the top. Place in oven at 160 (fan assisted) for 30 mins or slightly higher temp for non assisted. Take it out when it starts to look very lightly browned. Sprinkle a little more caster sugar on top. Cut lightly to chosen shape straight after removing from oven and leave to cool. Remove carefully, eat and enjoy! It is well worth it as the preparation only takes 5 -10 mins and you end up with about 25 medium sized pieces. No need to grease the tray either. Hope you enjoy it.
