Swiss Shortcakes - A hit!
Posted by Jane-suffolk on 13/5/2007
Just made these for my 8yr old son and they were a hit. Swiss Shortcakes
6oz butter 2oz Caster or Icing Sugar (I used brown sugar as had none of the other two sorts) 6oz Juvela Harvest Mix 1/2 tsp Vanilla Essence Glace Cherries (Opt Extra)
Cream butter and sugar, add essence and flour. Beat well with a wooden spoon.
You are now meant to put the mixture in a piping bag and make little swirls into bun cases and put a cherry on top.
Again I haven't got piping bag so put "dollops" in bun cases. It made twelve.
Cook for 20-25 mins at Gas 3-4, 325-350 F thats what it states in the book. I hadn't got a conversion chart for F to Celius so guessed and done them at 180 C.
When cool dredge with icing sugar.
Fantastic hit all round!
We also made a rhubarb crumble the other week and that was lovely as well.
4oz Juvela Harvest Mix 2oz Butter 2oz Brown Sugar
I actually layered the rhubarb in the bottom and then put custard over it and topped with crumble topping.
