Orange and almond cake.
Serves 8, ready in 2hrs 30 mins.
1 med orange 1tsp butter for greasing 5 med eggs 175g caster sugar 25g plain gf flour 3/4 tsp gf baking powder 175g ground almonds
1)Put the orange in a pan with enough water just to cover. Heat until simmering and simmer, covered, for an hour until soft. Remove and put in a shallow dish. Cool for 10 mins, cut in half and save the juice. Remove any pips, and place orange (inc skin and pith)in a processor. 2)Preheat the oven to 180c/160cfan/gas 4. Grease a 25cm, loose-based round cake tin and line the base with baking paper. Whisk the eggs and sugar together until thick and foamy. 3) Sift flour and baking powder on top and fold in gently with the almonds. Fold in the orange puree and turn into the tin. 4)Bake for 40 mins. Leave in the tin for 15 mins then turn out and cool on a wire rack.
