Pre-heat oven gas mk4 180c 350f ingredients: 3 eggs seperated, 3 oz (75g) castor sugar, 1oz (25g) gluten free cocoa powder. Whisk egg yolks, sugar and cocoa until it thickens and is shiny and smooth. In a seperate bowl whisk egg whites to a soft peak. Fold whites into chocolate mixture until fully absorbed, Pour mixture onto deep baking tray lined with greaseproof paper and bake for 15-20 mins until springy and risen. Once cooked allow to cool slightly then turn out onto greaseproof paper dusted with icing sugar. once cool spread jam and whipped cream all over roulade then roll cake bringing paper with you as you go to keep it together. Buttercream topping: 3oz unsalted butter, 6oz icing sugar, 1 tbsp cocoa powder, half tsp vanilla extract. Beat all ingredients together until smooth and then cover roulade, decorate with choice of sweets etc. This is really easy and you can change filling and toppings for every occassion. For grown up version you can add brandy, whisky to cream or for kids top with favourite sweets. ....
