I just had to post this recipe. If you love shortbread, you'll love these mince pies.
200g Plain flour (i used Doves Farm) 100g margarine (i used block stork) 1 egg 75g icing sugar 1 jar mincemeat - gf of course
Rub the margarine into the flour until it's like breadcrumbs. stir in the sugar. mix in the egg and knead until it forms a smooth dough (it only takes a moment.) wrap in cling film and pop in the fridge for 30 minutes. gently roll out the pastry and cut out disks to fit in a bun tin. cut out the same amount of smaller circles for the tops. Put a generous dollop of mincemeat in each case. Put the tops on and press them to seal the top and base together. Cook at 150C until the edges are just turning golden brown. Remove from the oven, sprinkle with caster sugar. Leave in the tin to cool for about 5 minutes then transfer to a cooling rack. Savour the taste and don't worry about the calories, it's Christmas!

Juvela mince pies Ingredients. Pastry 200g (8 oz) Juvela mix 50g (2oz) hard margarine 50g (2oz) lard 1 orange, grated rind and juice 1 medium egg, beaten Filling gluten-free mincemeat Glaze 1 medium egg, beaten Icing sugar Method. To make pastry, place Juvela mix in bowl and rub in the fats to resemble breadcrumbs. Stir in orange rind, beaten egg and sufficient orange juice to form a soft dough. Knead pastry well on surface lightly dusted with mix, then roll out 2/3rds and cut out rounds to line tartlet tins. Place a spoonful of mincemeat in each. Roll out remaining pastry and cut out rounds to complete pies. Brush with beaten egg and bake in a pre-heated oven (190C /375F/Gas Mark 5) for 15 to 20 minutes until golden. Serve warm dusted with icing sugar. I used 100g (4oz) butter instead of the hard margarine and lard to make a vegetarian pastry. Juvela website: www.juvela.co.uk/

Hazel's mince pies with sponge tops.
The mixture I used was:
6 oz gf flour 4oz margarine 4 oz sugar 2 large eggs
I just mixed this all together. Then added I think it was a quarter teaspoon of mixed spice. As you'd expect the pies took about 20 minutes at 190C. They are lovely! This was put on top of mincemeat on a pastry base but you could use it as an easy topping (like apple charlotte)if you don't want to make pastry. Posted by Hazel
