Tunis Cake Recipe

CAKE 8oz Doves S.R. G.F. Flour 6oz softened butter 6oz caster sugar 4oz ground almonds 1 lemon, juice and rind 3 eggs
TOPPING plenty of good quality chocolate marzipan fruits (I bought mine from M & S)
METHOD Place butter and sugar in a mixing bowl and beat until pale
Add eggs, flour, lemon juice, lemon rind and ground almonds and mix thoroughly.
Place mixture into an 8 inch greased and floured cake tin and bake in a preheated oven at 150/300/gas 2 for one hour, or until springy in the middle when pressed.
Leave on wire rack to cool.
To decorate, wrap some greaseproof paper around the sides of the cake and make sure the greaseproof stands proud of the cake and secure with string tightly so that the chocolate cannot run down the sides - there should be enough chocolate to provide a thick layer.
Pour over melted chocolate. When choc is set remove the greaseproof paper and add the marzipan fruit.
