I'm with you all the way here, Jenny. My daughter was diagnosed when she was 2 (now 14) and it does take your head a long time to get round it. In those 12 years however, the bread has improved so much and since then my husband & son have also been diagnosed. It would be awful to have to go back in time to the long life bread. For speed and ease, every school day I make up 3 lunchboxes with "shock horror!" sandwiches (GF of course - are 2 slices of bread per child and 4 per adult really tantamount to an unhealthy diet alongside fruit, cheese & yogurt??!!)
To have to start refreshing nearly a whole loaf of longlife bread every morning & then waiting for it to cool down (aside from the awful taste & texture) as well as providing a healthy breakfast of fruit, GF porridge or eggs before an 7.50am leave for school would not be impossible but why should I have to do it???!!! (A lot of people I hear of send their "normal" kids off to school with a pack of crisps or chocolate biscuits for breakfast to eat on their way to school - surely this is building up poor health and they are going to need medical intervention which will cost, later on in life!)
Good luck with claiming your unemployment benefit, that's what I say - it makes me mad that me & my husband have worked hard & paid our taxes all our lives and we pay for prescriptions but we one day we may not be able to get decent-(ish) GF bead on prescription
