I bought some tiger prawns yesterday and decided to use cornflour and beaten egg to coat them. I dipped the prawns in the egg, then flour and repeated same. (Don't worry if you find it looks lumpy). Then I fried them in half butter and half olive oil. They turned out really crispy. As I am away from home at the present time, am having to use a gas hob and am convinced this method of frying is much better.

tempura batter! Posted by Kaaloo on 18/2/2011 GF board We've never had tempura batter in our house so I had a bash after reading about it.... earlier. It is very easy - I used: 1 cup of GF juvela all purpose flour 3/4 cup of iced water - and I mean seriously cold water 1 small egg seasoning to taste (I even used a bit of powdered red chilli) 1)Mix the egg with the ice cold water 2)Fold (not mix) the seasoned flour into the above mixture -should be runny and slightly lumpy - dont over stir. 3) Drop 2 ice cubes in and put in fridge for an hour or so 4) Coat fish/veg/chicken in batter and fry in very hot oil till golden brown. Turn as needed The iced water causes it to puff up and give an nice crisp taste. ..... the result was delicious. I used cod cut into pieces.
