I make home made chicken Goujons, gluten free bread made into bread crumbs, chicken sliced, dipped in egg and gluten the bread crumbs. You have to sometimes mould the bread crumbs onto the chicken but when fried they come out really tasty and juicy.

...Here's another one which I make because my little boy loves smashing the cornflakes with a rolling pin! BTW, make sure you use the gf cornflakes! Put cornflakes in a plastic bag and you can add some paprika, dried basil and finely chopped pecan nuts if you like. Smash cornflakes etc with rolling pin. Put goujons in beaten egg then drop in bag containing cornflake mix and shake until chicken is coated. Can then be fried or baked in oven and served with garlic mayo or honey and mustard dip. Yummy!
