Make a typical italian ragu....... 1 x chopped onion 1 or 2 cloves garlic chopped 1 tin tomatoes 1 tablespoon tomato paste or 1.5 tablespoons of Heinz organic tomato ketchup Fry the onion and garlic in a little olive oil in a saucepan until brown add the tin of tomatoes and then the paste. If using paste add a little sugar, if using ketchup you don't need the sugar. Now you will need..... 1 x courgette (chopped but chunky) some mushrooms (cut in quarters) handfull of olives if liked Add the above ingredients and let simmer. use salt and pepper to taste. Boil some GF pasta shapes until al dente and drain. Put pasta in a large baking dish and add the contents of the saucepan. Mix well. Now take a tin or two (if hungry) of Tuna in Brine and drain. Add to the baking dish flaking slightly. Finally get some Sainsburys' basic Tortilla chips (or similar) and put on the top to form a crust. Sprinkle with grated low fat cheddar cheese and bake for 20 minutes in a hot (200) oven. Adjust oven if fan assisted accordingly. Enjoy MAC
