Layer a casserole dish with well-drained cooked spinach. Poach boneless cod and salmon loin in milk. Save the milk.
Make a white sauce, using the saved milk plus extra. Add the juice of a lemon plus the zest, chopped fresh parsley, a few drops of Thai fish sauce, salt and black pepper.
Flake the fish and add to the sauce along with prawns.
Put this on top of the spinach and then put mashed potato on top (Aunt Bessie's will do if you are on the hoof).
Place in the oven until the potato is nicely browned.
