Once again there is no recipe, but here is what I do. Take any left over boiled potatoes or mash, put in a good size knob of butter and mash together, add a pinch of salt and a little bicarbonate of soda and a enough flour to make into a stiff dough, place on a floured table and kneed, once you have a nice ball of dough roll out to about ΒΌ thick, cut into triangles (traditional but not essential) and fry in a dry pan till a golden colour, these can be served immediately with butter of fried for breakfast. Keep the frying pan at a medium heat... **********

Julie makes fish cakes like this, she just adds a can of tuna, salmon or mackrel to left over mash, also adds parsley and salt & pepper, makes into rounds and fries them in a dry pan until golden, nice with some homemade chips or cold with a salad. Bill

I make batches of fish cakes usually when salmon is on special offer but other fish would be just as good. Micro / poach the fish and then flake. I make up mashed potato. Fry off an onion. Part boil some brocolli, then chop up small. Mix everything with black pepper. Shape into cakes. I then freeze on a sheet of greaseproof and then wrap so they can be used individually. When I am ready to cook them I roll in cornmeal or rice flour and bake on a greased sheet.
