Chilli con carne recipe

Hi everyone, I made this chilli the other day, its quick to make and really nice, it serves 4 to 6 people, you can freeze the rest or just half the ingredients for less people.
1 large onion; 2 finely diced garlic cloves, 450g (1lb) extra lean minced beef, chopped fresh thyme or 1 tbsp of dried thyme, 1 beef stock cube, I red pepper deseeded and sliced,1 (or 2 if you like it hot) small red chilli, 1x400g can of chopped tomatoes, 1x 4oog can of kidney beans, a 300g jar or a packet of passata, 1x tbsp of tomato puree.
Heat a non-stick frying pan, add onion and garlic until softened. Add minced beef and thyme and continue to cook until mince is browned. Sprinkle stock over the mince. Then add the pepper, red chilli(s) tomatoes, kidney beans, passata and tomato puree. Simmer for 25 minutes until the sauce has thickened.
