I got this from a Mexican/Mayan friend Tlatlicue; I’m posting it just as I got it.
taco meat
get flank steak, boil it until it is very tender so it is easily pulled apart and shredded, it will probably take 2-3 hrs of boiling time, depending on size of steak, you can use the liquid in some stew or something if you like or just throw it out, let it cool, it is easier unless you left it to the last minute like i usually do and end up burning my fingers (hahaha), then shredd meat just pull it apart it will be really easy if it was cooked long enough, once this is done, you have a skillet with olive oil heating, or veggie oil if no olive is available,
put the meat in, heat it up throughly and then add salt to taste, and a little bit of oregano, not much or it tends to overpower the meat and the other flavors you want to add to your taco, no more than 1/4-1/2 tsp (u.s. meassure)
and make sure you crumple it very finely over the meat, cook a bit longer and then turn off heat and add the juice of half a lemon ( i think you call them limes ), mix well and enjoy, and please whatever you do under no circumstances should you add cheese, lettuce or black olives, cheese only if it is doble crema...i usually make refriend beans and some salsa to add to it but really you can put anything you like in a taco, well with the exception of the above mentioned items lol.
tortillas is all you need , taco meat, green onions, cilantro (coriander, fresh) , and a good salsa you just build your taco with what you want in it.....the lemons bit is cuz oor lemons are green jist like yer limes sorry i was nae mair clear on that..basically a taco is sort of a sandwich you just put anything you like in it and go fer it...except what is available to mexicans is your beans,meat,salsas, rice and such...but think of it that way and you will see you can have a very satisfying taco experience.....
sometimes mexican rice would be a nice addition to your taco, or what we call picado, which is radishes i will post that recipe themorra....flank steak can be substitued by skirt which is the part of the beef that hangs on the sides of the ribs, you can also use this recipe with chicken just use thighs and breast meat, though other parts of the chicken would be good too....turkey can also be used (guajolote as we call it)

you will need lets see aboot 2 bunches of radishes now if you are able to find the
long ones they sell in mexico you will be in luck you only need one depending on
how many people will eat it.....clean and cut ends of radishes, chop the radishes
very finely, add lemon juice ( and ye kent whit ah mean ere ), salt and finely
chopped fresh peppermint, a dash o' pepper and mix throughly, let sit in the
refrigerator for 2-3 hours before serving so the juices get mixed well unless you
are like me and canny wait....this makes a guid addition to your taco, also can be
eaten on tostadas, which are deep fried tortillas and just used as plates...if you
happen to find mexican pork skins the kind just made fresh you can add this to
the picado as well, but dont get the ones in the bags sold as snacks, unless they
are the mexican ones and not inmitation and if you like to spice it up chop some
serrano peppers but take the seeds out and use something on your hands when
you are culling the peppers if the juice gets on your fingers and you forget and
touch your eyes mouth etc... you will be very very sorry, i speak from experience
i was looking at the Picado recipe, and i realized that i forgot to tell you all to add
onions, red onin is better but the others will do, do not use green onins, also
chop the onin very very fine the smaller the better....one mair thing use only the
leaves of the peppermint ....
Black bean soup
clean black beans, and rinse under cold water, leave to soak overnight in cold
water,just cover beans...before cooking discard water and rinse again, then put
to boil with a ham soup bone or other meat bone you like, add aboot a teaspoon
of sea salt or coarse kosher salt if you have none of this then table salt, you will
have to adjust taste once beans are cooked, make sure you add water as it is
evaporated as it boils, once beans are cooked adjust salt to taste while it is still
boiling to disolve salt, discard bone or feed it to your dog or cat if they are into
that sort of thang.make white rice, basmanti is the best but use what you like or
have on hand....
serve bean soup and in separate bowls have rice, chopped cilantro ( coriander ),
serrano peppers, green onions, and lemon wedges, and add to your soup what
you like, dont forget to have some tortillas on hand to eat with your bean soup
you could even tear the tortilla and add it to the soup gives it an interesting
flavour, use corn tortillas for this as floor tend to not be guid.
Frijoles negros refritos ( black refried beans)
if you have black beans that you have made for soup, on the second or third day
you can make "frijoles refritos", you will need olive oil, fry some ham, just till you
can smell it, discard ( or eat as you wish, give it to the cat whatever ) use onions
and fry them until they turn transparent, better if you use green onion, and keep
the greens,add one garlic clove, peel and crushed with the flat of a knife
add beans, withoot the water and crushed if you like you can strain beans
into paste, add to oil mixture, add aboot 1/2 tsp of dry thyme, or one sprig of
thyme if fresh, leaves only chopped very fine,then cook crushed beans or
strained beans, cook in oil until hot and good to taste.
you can substitute the oil for bacon grease, you can add the bacon as well just
crumble it, if you use the bacon method dont use ham...
