i make a roasted veg soup, which is very tasty+v easy! i quarter an onion, peel and roughly chop some veg (about 2kgs, root vegetables work best) and place everything on a baking tray with some olive oil (about 3tbsps)+sea salt. cook for about 40 mins at 200 degrees C (cover the veg with foil if it colours too much), then add to about 1.5l of veg stock (i also like marigold boullion reduced salt) with some fresh herbs+blitz. add more stock/water if it's too thick. my favourite version is a sweet potato, carrot+corriander soup (i add a slug of orange juice to the stock for this version). …… *************
