Posted by Anne P (Cambridge) on 28/2/2007 I make a quinoa bake: Heat the oven to about 180C Follow the instructions on the packet to boil the quinoa (assuming there are instructions - it's usually something like "boil for about 10 min in twice the volume of water, then remove from the heat and cover with a tea-towel until all the water has been absorbed" - I usually use one mug of quinoa for dinner for 2 adults and 2 small children). While that's cooking, fry an onion with garlic and other veg lurking in the fridge - I often add red pepper and celery and sometimes finely diced carrot. … When the quinoa has absorbed all the water, and the veg are fried mix them together with some grated cheese and put in a casserole dish. Top with more grated cheese and bake for about 30-40 min. This is a very flexible recipe - miss out any bits you don't like, or add in other veg/… you have lying around that you want to use up. ...
