yorkshire pudding

GF board
I use Jamie Olivers recipe from the Ministry of Food book. Works really well with GF flour...makes the biggest yorkies I've ever made:
3 eggs 115 g plain flour 1 pinch sea salt 285 ml milk 12 tablespoons vegetable oil
Directions:
Whisk the eggs, flour, salt, and milk together really well in a bowl to make your batter. Pour the batter into a jug, and let it sit for 30 minutes before you use it.
Turn your oven up to the highest setting, and place a 12 cup muffin tray in the oven to heat up for 5 minutes.
Place 1 tb of oil in each muffin hole, and put the tray back into the oven and heat until oil is very hot.
Open oven door, slide the tray half out, and carefully pour the batter into the muffin holes.
Close the door and cook for 15 minutes without opening the oven door.
Serve immediately.

This recipe works well. can't remember where I found it:
2 oz. of gluten free flour 2 oz. of cornflour 3 medium sized eggs (beaten) Pinch of salt ΒΌ pint of milk
Thoroughly mix ingredients. Add a small amount of oil to the bottom of each of the compartments of a Yorkshire pud tray (enough for 4) or the compartments of a cake tray (enough for 6). Place the cooking tray with oil added into the oven. Heat oven to 220c. When oven reaches 220c, remove the tray, pour in the mixture, and return the tray to the oven. Cook at 220c for 20 to 25 minutes

GF board
Yorkshires,
I make them as follows and then turned out perfectly:
200ml beaten egg (roughly, 4 medium eggs or 3 large eggs) 200ml semi-skimmed milk 140g Dove's Farm Plain GF flour Salt and pepper
Mix the milk and egg, then beat in the flour. Stick a muffin tin in an oven pre-heated to 220degrees C for 5-10minutes, with about 1cm of veg/sunflower oil in the bottom of each hole.
Take the muffin tin out of the oven and straight away, pour the batter into each hole evenly (but be careful because you don't want to overfill them. There should probably be no more than 1-1.5cm of batter in each hole). Then place back in the oven for 20-25mins.
And you can freeze them once they've cooled, so you can make them BEFORE Christmas and then heat them up as you would normal frozen ones on the day! Bonus!
