We went to NZ in Nov 2004, touring for six weeks and had very few problems. Coeliac nz info is fairly good tho not up to date (who can be when places change hands, have new staff etc).
We found it easy to buy fresh bread, especially if we were in one place more than a day and there are lots of other gf goodies available. Many supermarket staff were clued up and willing to show what was in-store or where else you might buy produce.
Eating-out was rarely a problem and we ate out most of the time. If you are staying with family, it should be even easier. Unless you particularly want to, I don't think there'll be any need for you to transport your own food.
Have a wonderful time. It is a brilliant place to visit and sooooo cheap! If you get to Rotarua, I'd highly recommend the Polynesian Spa for a treatment. Soak in the hot springs, have a wonderful massage treatment and come out feeling on cloud nine! Such value for money AND gf!
We went to a Hangi (spelling?) Moari night and most of the food there was gf too. They were so nice about letting me get my food first in case there was a risk of cross-contamination. Oooooo I want to go again!!!

I recently emigrated to NZ and have generally found people to be very helpful.
There is a good range of GF foods in the supermarket and you can also find GF bread quite easily, although it tends to be quite heavy.
Whilst we were in Auckland we went to a store in Takapuna, North Shore which had an amazing supply of GF foods and fresh bread baked every day. I can't remember the name of it but you can find it on the coeliac nz website. Its well worth going to to stock up on supplies.
There's a chain called Hells pizzas that run throughout the country that will do you a gf pizza and they are careful about contamination.
There are two other pizza restaurants that do GF, Filadelphios (Dunedin) and Winnies (Queentown and Christchurch). I'm not sure if they're only based in the South Island but their pizzas are very nice. You tend to have to check that they keep everything GF. They will often serve the pizza on a wooden board if you don't say.
Some cafes will do GF cakes but not keep them separate so you have to be careful.
I live just outside Dunedin and they've just opened a bakery in Mosgiel called the Coeliac Bakery and you can get all sorts of freshly baked items. They have a website with opening times.
