Now that every ingredient has to appear in a product's ingredients' list, you need to know what to look out for! Some ingredients can be derived from wheat or barley but are safe for people with coeliac disease. This is because they are highly processed and the gluten content is negligible e.g. glucose syrups derived from barley or wheat. ...........
Use this checklist to help when you are shopping:
Gluten-free ingredients: Textured vegetable protein Caramel Artificial sweetener Aspartame Dextrose Xanthan gum Maize starch Modified starch Modified maize starch Rice malt Corn malt Rice rusk Maltodextrin Glucose syrup Sorbitol Maltitol Isomalt Monosodium glutamate Citric acid Magnesium stearate
****************
Ingredients that contain a low level of gluten within the Codex standard for gluten-free:
Codex Alimentarius gluten free wheat starch
*******************************
NOT gluten-free: Wheat starch Modified wheat starch Wheat rusk Wheat bran Barley malt Barley flour Oat bran Rye flour *******************
