1 cheesecloth (or muslin) 1 litre stirred yogurt tsp saffron threads 2 tbsp caster sugar 4 tsp full-fat milk tsp ground cardamom Place the cheesecloth over a big pot, pour in the yogurt, then hang it to drain over the sink for at least three hours, though preferably overnight. Crush the saffron with a pinch of sugar and beat into the milk. Combine the hung yogurt with the saffron milk and the rest of the sugar, and whisk or blend until very smooth.
