.....Ajari Chicken (cooked in lime pickle), pumpkin salon with plain basmati rice and egg coconut cream cake for dessert.
Fry down onion, ginger, garlic. Add a whole chopped up chicken then add about 2 tablespoons of the lime ajar. Add 3 chopped green chillis (to taste), corriander. Add water to help it cook. Add just a bit of coconut cream to soften if it is too hot.
Pumpkin salon Roast pumkin in oven. When cooked remove skin, add chopped tomatoes, salt, pepper, sweated onion, sweated garlic, sweated ginger, chopped chilli and a little water. Then put it back in the oven until ready to eat.
Coconut cake - was yesterdays food experiment yummy!
4 eggs, 2 tablespoons gf plain flour, 4 spoons caster sugar, 4 spoons butter. Half can gf coconut cream. Nutmeg.
Combine all the above to smooth runny batter. Pour into a buttered cake tin. Cook on a slow heat (100) for an hour / hour and a half until the top is crunchy.
