Istanbul cold milk pudding (Keskul) by kickingfrog
120g ground almonds (or blanched almonds ground with pestle and mortar) 600ml milk 30g ground rice/rice flour 120g sugar 1tablespoon ground pistachios/desiccated coconut
Mix almonds with a little milk. Mix ground rice with a little milk. In a saucepan bring to boil the rest of milk, with sugar, stirring all the time. Reduce heat. Mix 2/3 tablespoonsful of hot milk to ground rice and then stir into milk in pan. Add almond paste, stirring all the time. Simmer 25/30 minutes,keep stirring until it thickens. Pour into individual bowls, sprinkle with pistachios/coconut. Chill when cold & serve.
