Gluten-free Mandel Bread – Pareve From Diana Wax: Gluten-free Mandel Bread – Pareve 2-3/4 C all-purpose gluten-free flour 1/2 C sweet rice flour (available at Asian grocery stores) 1 C almond meal 1-1/2 t baking powder 1 t baking soda 1/2 t salt 1-1/2 t xanthum gum 1-1/4 C sugar 3/4 C vegetable oil 3 eggs 1 t cinnamon 1 t almond extract 1 t vanilla extract Several handfuls of sliced almonds Preheat oven to 350° F. Combine dry ingredients (except sugar) in a medium bowl. In another bowl, whisk together sugar and oil before adding the eggs, cinnamon, and almond and vanilla extracts and beating well. Add the wet ingredients to the dry, blending with an electric mixer, creating a fairly thick dough. Roll cookies into 4 logs and top with sliced almonds. Bake for 35 minutes, or until golden brown. Let cool for 10 minutes, slice into 1” sections, and bake again – standing the cookies up so they cook evenly – for 10 minutes. Let cool completely for ultimate crispness.
