This mixture makes smooth white chapatti. I prefer to use Juvela Mix with Fibre Mix to give a textured taste. Take 3 heaped table spoons and place in a bowl. This for me makes about 6 chapatti’s depending how big you want them. Take a heaped tea spoon of xanthum gum and sprinkle on the flour. Drizzle a tea spoon of oil and mix together. Pour boiling water ¾ level to the contents then sprinkle cold water and let it stand for about 20 seconds before you start to mix. Do not put too much water as this will make the mix too soft. You can add a little at a time until you get used to the mix. Once the flour is sticky roll into a ball and lightly knead with butter. Divide into equal balls. Dip in flour and roll to required size. Place on the tawa and cook lightly on both sides. Then turn over and cook until it rises. Add a little spread e.g. butter / margarine. Continue to make the rest then eat and enjoy
